Texel nursery The Texel Mushroom Nursery focuses on traditional cultivation. Grower Maarten Dijker thoroughly immersed himself in the growing process and in 2008 he successfully started growing shiitake. Top restaurants on and outside Texel use shiitake from the island. Growing bales The mushrooms grow on growing bales. This is done in a closed room, which is kept at a constant temperature. The mycelium (spores of the shiitake) branches and the fungus draws nutrition from the 'bales', which consist of sawdust, among other things. After about 15 weeks the shiitakes are fully grown. The harvest is done manually by cutting the mushrooms from the trunk. Shiitake mushrooms are supplied all year round and can be processed both fresh and dried. Sales The Texel Mushroom Nursery supplies restaurants, wholesalers, (natural food) shops and private individuals. The shiitake are available in containers from 100 grams. Due to its versatility, more and more restaurant dishes with shiitake are included in the menu.
